Mission Inn Wedding Catering Manager – Kelsey Balmer

The Mission Inn Wedding Team would like to introduce Kelsey Balmer, catering manager. Kelsey joined the wedding team this past March. She received her Bachelor’s Degree in Resort & Hospitality Management at Florida Gulf Coast University. Kelsey also holds the title of Certified Wedding Planner through The Bridal Society.
Kelsey joins the Mission Inn Wedding Team with years of experience as a catering and sales manager in both South and Central Florida. She has experience working with weddings and social events as well as larger corporate functions.
We wanted to find out more about Kelsey and share it with you!
Mission Inn: What is your favorite thing/part about weddings?
Kelsey: As a catering manager, I work closely with couples for months and even years planning their wedding day. I love seeing each couple’s reaction on wedding day when their vision comes to life and they see their dreams and hard work come alive.
Mission Inn: Three things that make you happy?
Kelsey: Having time to spend with my boyfriend Dj definitely makes me happy. Our adventures consist of binge watching Criminal Minds on Netflix or indulging in our love for either sushi or Mexican food. My little Corgi, Jasper, kills me with his cuteness. We both had wanted a dog for a while now and finally found him! Coming home to Jasper jumping up to give me kisses is the best thing to walk in the door to. Finally, after a long day, I like to treat myself to a glass or two of red wine!
Mission Inn: What is your favorite cake flavor?
Kelsey: I constantly have a craving for anything chocolate – chocolate cake being one of those. So when it comes to cake, the more chocolate the better!
Mission Inn: What did you want to be when you grew up?
Kelsey: A singer! Growing up I always enjoyed writing and recording songs on my phone. In 2016 I was lucky enough to record my own single at a recording studio and have it published to major music outlets.
Mission Inn: What’s your favorite wedding venue here?
Kelsey: I am absolutely in love with Marina del Rey. The dark tones complimented by the string lighting in the reception space – it’s just so perfect to me. To top it all off you have the beautiful Lake Harris as your ceremony back drop. Everywhere you look it’s breathtaking.

Mission Inn: What is your favorite social media app?
Kelsey: Hand’s down – Instagram, I’m addicted!
Mission Inn: What is your favorite holiday?
Kelsey: Christmas! I love going home to spend time with family, hearing Christmas songs on the radio and all of the delicious food. It’s always such a happy time of the year.

Mission Inn: Where are you from?
Kelsey: I am a true Florida girl. Born and raised in West Palm Beach, FL
Mission Inn: Favorite thing to do on your free time?
Kelsey: I enjoy fitness, good food and also going on adventures to Universal with my boyfriend.
Mission Inn: Do you have a go to pick-me-up?
Kelsey: Brownie Chocolate Peanut Butter Kodiak Cake. This is my favorite “healthy” dessert that I always make sure I have stocked in my kitchen. It fills my chocolate cravings and gives me the protein I need!
Mission Inn: Tell us about your dream wedding day
Kelsey: I wake up to mimosas and a platter of cheese and pastries as I get ready with my sister, mom and closest friends. After getting pampered with hair and makeup, I have a first look with my soon to be husband. I picture us getting married under an oak tree in an intimate setting. I would kick off the party with sangrias and then enjoy the rest of the night with a delicious buffet, endless desserts and dancing to a mix of 90s throwbacks and my favorites pop songs all night long.
